My Recipes

Welcome to my kitchen—where faith, family, and good food meet.

I’m a Christian author, wife of 41 years, mom, and grandmother. Cooking has always been part of how I love and gather people—around the table, around the Word, and around real life with Jesus.

Here you’ll find simple, nourishing recipes from our family table. I’ll be adding two new recipes each week, Lord willing.

Pull up a chair and enjoy.

Recipe for Chickpea Mac and Cheese

1 Box of chick pea elbow pasta

1 cup white sharp cheddar cheese

1 cup Parmesan

1 cup cottage cheese

1/2 cup sour cream

1 egg

1 stick melted butter

2 tablespoons honey

2 tablespoons chopped jalepinos

2 or more cups milk

Salt

Pepper

 

Instructions:

Mix well boiled, drained pasta with all ingredients.

Place in buttered 9x13 dish 

Cook at 350 until bubbly and a little golden brown on top

Strawberry Orange Pecan Salad

Salad Ingredients:
Arugula
Oranges
Strawberries
Feta
Pecans
Butter
Honey

Dressing Ingredients:
1/2 cup Apple Cider Vinegar with the mother in it
2 tablespoons Dijon mustard
1 pressed, or minced garlic clove
Juice from 1/2 lemon
Two tablespoons honey
Salt
Pepper
1/2 cup natural, unsweetened apple sauce

Directions:

Mix 1/2 cup, or so pecans with butter and honey.  Bake on 400 till melted and a touch of browning, not too long.
Assemble with the rest of salad ingredients.
Mix dressing ingredients till combined.
Too with applesauce apple vinaigrette.

Serve with a slice  of homemade sourdough bread with butter and hot pepper jelly.
